Malaspina's world-recognized Culinary Arts ( Professional Cook Training ) is a 12 month Certificate Program which provides men and women with the skills and expertise to enter the field of professional cooking, one of the most dynamic career choices in the world today. Our acclaimed and award-winning distinguished Chef instructors combined with a state-of-the-art lab kitchen with induction-heat cooking equipment, are key elemets for the students to quickly progress to the fast-paced environment of the production kitchen where they learn the basics of French and "fusion" cooking, prepare meals for Malaspina's two cafeterias, the Discovery Room (a fine dining restaurant open to the public), banquet and reception. Time is spent in theory classes, and home work is expected. Students have the opportunity to take part in competitions judged according to national and international standards.

The program covers the following area:
Meat and Poultry cookery / Seafood Cookery / Stocks, Soups and Sauces. Vegetable, Potato and Starch Cookery / Meat, Poultry and Seafood Cutting and Processing / Cold Kitchen / Baking and desserts / Basic Food Service and Kitchen Management / Breakfast Cookery. Safety / Sanitation and equipment / Health Care / Cook-chill / Diet and nutrition.
Regular attendance and a minimum of 70 % in both the practical and theory are required to pass.

Graduates of Malaspina's Culinary Arts program leave with a sound knowledge of the basics of professional cooking. Students who excel in the 12-month program are in high demand, and many have attained top-level position in five star hotels, restaurants, private clubs, in Canada and other parts of the world. Graduates have also found employement in industrial kitchens and food catering outlets. Chefs in the industry recognize the expertise of Malaspina Culinary Arts graduates and regularly contact Malaspina instructors when opportunities arise locally, nationally and internationally. Graduates may wish to take apprenticeship training through an employer in order to attain industry certification, and they will receive up to one-year credit towards an apprenticeship for Malaspina's Culinary Arts program.

Malaspina University-College also offers a 10 month full-time Professional Baking program, which provides students with knowledge and experience in the production, science and art of baking in preperation for employement in the professional baking industry, retail and wholesale bakerie, supermarkets, restaurants, hotels, catereers, camps, and other food-related businesses. The program takes place August to June, Monday to Friday, in a well equipped commercial bakeshop, class run from 5 to 11 am, under condition similar to an actual working bakery.
