The school offers a complete culinary education with graduates receiving CC
(Certified Culinarian) certification with the American Culinary Federation
at graduation. The curriculum is hands-on and lecture. Students operate a
restaurant, cafeteria, and on-site catering through our conference center.
Both the students and faculty win awards in sanctioned culinary competitions
each year. Fifteen full time chefs direct the classrooms. The school is
located in historic St. Augustine, Florida, the nation's oldest city.

Other Activities Wine tastings, grape harvest tours, excursions to the small villages of Southern Tuscany: Montalcino, Pienza, Sovana, Pitigliano, Saturnia. Lunches at local restaurants.
Emphasis The art of Tuscan cooking. Such typical rustic Tuscan dishes as acquacotta (bread and vegetable soup), bruschetta, game (wild boar and hare), pasta sauces.
