| Description / diplomas: Recommended by "Lonely Planet", "Frommer's" and the "Rough Guide" to Thailand, SITCA's internationally acclaimed Thai cooking classes meet twice daily, 7 days a week all year around in the Institute's 90 square meter modern air conditioned facility. Instruction is totally hands-on and every student has their own burner at the stove and complete ingredients. Menus change daily and students can attend as many or as few classes as they wish, subject to space. Everyone receives a cook booklet of all recipes to make notes in and take home. Each students can invite a friend to join them at meal time at no charge. Three-day 6 hour courses in the rarified art of Thai style art of fruit and vegetable carving meet twice weekly in an air-conditioned classroom. Three foreign students are accepted each month for SITCA's three week intensive professional training programs designed to allow foreign chefs to acquire Thai culinary skills that will qualify them to work in fine dining establishments. Instruction includes Thai cooking, carving, napkin folding, flower arrangement, table skirting and service, as well as nightly hands-on training with the chef in the kitchen of the school's gourmet restaurant. Executive chef Sirikarn will guide you through the ingredients, marketing, preparation and cooking processes involved in the creation of a sumptuous five course lunch or dinner. Cooking. Daily changing menus give the professional chef or serious amateur the opportunity to participate in multiple courses and the wealth of menus and ideas provided will enable you to impress family friends or customers with superb Thai dinner parties. Each day's menu includes a Starter, Spicey salad, Thai traditional soup, Main course and Desert plus the knowledge neccessary to prepare the various curry pastes, sweet and sours etc.... Choices.
