Job description For a large 5* resort ECR Hospitality Recruitment is looking for an executive chef.
Responsibilities include:
-ensuring that each Outlet Chef de Cuisine and Sous Chef run their kitchens at an acceptable food cost and that they are maximizing employee productivity to minimize payroll costs.
-assisting each Chef de Cuisine and Sous Chefs with the preparation of annual operating budgets which will form part of the Business Plan.
-monitoring all kitchen related costs and recommend changes to each of the Chefs de Cuisine and Sous Chefs where appropriate.
- working with the Executive Sous Chef in setting appropriate incentive schemes for all kitchen staff.
-keeping the Chefs de Cuisine and Sous Chefs up to date with seasonally available meats, fish and produce on the local market.
-assisting in the development of product specifications for all menus
-monitoring food standards in each outlet and banquets and to take corrective action where appropriate.
-co-ordinating the Stewarding requirements of the Kitchens.
-encouraging Chefs de Cuisine and Sous Chef to be innovative and creative.
-ensuring that product consistency in quality of appearance and taste.
-assisting Outlet Managers in maintaining a high quality operation in service and cleanness.
-conducting meetings with the Executive Sous Chef and Director of Food and Beverage and the Outlet Management teams.
-maintaining a high standard of kitchen hygiene at all times.
-identifing training needs and plan training programs for the employees and conducting these in accordance to the Annual Training Plan in order that employees have the necessary skills to perform their duties.

Required education and work experience
  • Culinary degree
  • Excellent command of English
  • Minimum 10 yrs of experience
  • Experience in international hotel chains, and large operations.
  • Must have experience in up market buffets in big operations.
