Job description Casino Careers Online has a client seeking a candidate for a Chef DE Cuisine position.

Description
SUMMARY:

Responsible for kitchen operations in the absence of, and in assistance with, the Executive Chef. Responsible for the quality assurance of all finished food products and the ultimate supervision of property food venues ensuring that the
property specifications and standards are adhered to and met.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following:

· Develops kitchen management team and utilizes this team to accomplish efficient kitchen operations.
· Ensures specs in all recipes and food apportionment are met.
· Maintains excellent kitchen hygiene conditions at all times.
· Tests and develops new recipes.
· Monitors guest satisfaction.
· Maintains knowledge of and familiarity with a variety of the fields’ concepts, practices and procedures.
· Leads, directs, and assists with the work of others.
· Controls food and labor costs on a continual basis within approved budgetary controls.
· Makes recommendations and suggestions in hiring, terminating, suspending, and counseling to the Executive Chef.
· Maintains knowledge of all state health department regulations and ensures all conditions and standards are met.
· Maintains professional grooming and appearance and acts as a role model according to established grooming and appearance policy.
· Plan, direct, and supervise the food preparation and cooking activities of multiple kitchens or restaurants in an establishment such as a restaurant chain, hospital, or hotel.
· Participates in departmental and venue meetings, facilitating the flow of pertinent information from
management to employees.
· Provides all employees with proper training and counseling as needed in accordance with policies and procedures.
· Demonstrates culinary techniques and/or methods to employees or guests.
· Assists guests with special requests as needed.

Required education and work experience
  • Culinary degree required. Minimum of 5 years previous experience as senior management or the equivalent in a multi-venue facility
