Casino Careers Online has a client seeking a candidate for a Fine Dining Chef position.
The position description is as follows:
The Fining Dining Chef will assume all responsibility and oversee all back of the house (kitchen) operations for the Fine Dining Outlet. The candidate will work a flexible schedule in a hands on environment. The Fine Dining Chef will oversee all food storage, preparation, and production. The candidate should possess strong leadership skills, be self driven, oversee scheduling, training, selection, coaching/counseling, and inventory. The candidate will assume food cost and labor cost fiscal responsibility. Must be able to accomplish job tasks while maintaining a high degree of present ability to guests. Must be able to properly communicate with guests. Exhibit the ability to create a critically successful food operation in the local marketplace by being aware of the current styles and trends in the outlets specific field. Be knowledgeable in all other aspects of food preparation as required of the Executive Chef. Must be creative, innovative, and assertive. Understands the five mother sauces and numerous derivatives and is able to make them in varying quantities. Can identify major cuts of meat and knows how to best fabricate and prepare them in a single, multiple and mass production. |

- GAMING INDUSTRY EXPERIENCE IS PREFERRED

- The Candidate should have a Culinary Degree from an accredited school and 5 years of experience or equivalent work experience as an Executive Sous Chef or Chef D' Cuisine is required. Start up experience is a must.
- The Candiate should have basic computer skills including Word and Excel as well as have budgeting and inventory experience. The Candidate must be Serve Safe Certified.
