Job description Casino Careers Online has a client seeking a candidate for an Executive Chef position.

The position description is as follows:

Summary: The Executive Chef will oversee, lead and direct all food-related operations as they pertain to the Kitchen. The Chef’s position includes, but is not limited to, special emphasis on food quality and food consistency, scheduling, mentoring and specific focus on Kitchen Team Members development. This position requires a high level of people skills and a motivational attitude to lead by example. The Chef will set and achieve the highest degree of food quality, taste and presentation to meet or exceed the Food and Beverage Director’s approval. The Chef will direct, lead and delegate with confidence all special requests and/or events.

Duties and Responsibilities: (Specific areas of responsibility including, but not limited to):
-Assists in interviews, hiring, training, mentoring and counseling of all Kitchen personnel.
-Conducts performance evaluations of all Kitchen personnel in conjunction with the Food & Beverage Director.
-Prepares all weekly schedules for Kitchen staff and submits them to the Food & Beverage Director.
-Implements proper pars regarding all food, flatware, and any and all kitchen-related items.
-Supervises all line and prep procedures.
-Ensures all Kitchen personnel are properly trained.
-Communicates daily with the Food & Beverage Management team and conducts or attends weekly Food & Beverage meetings.
-Responsible for conducting and verifying monthly inventories.
-Creates and maintains a kitchen copy of a recipe book with specific procedures, production times and portion control.
-Develops and maintains a quality control system for all food preparation.
-Assists with purchasing, costing and planning.
-Controls and monitors all labor/food costs.
-Ensures all kitchen equipment is functional and safe.
-Performs other duties as required or assigned by the Food & Beverage Director.
Contract conditions and benefits
  • Salary Range: $70,000 - $95,000

Required education and work experience
  • GAMING INDUSTRY EXPERIENCE IS PREFERRED
  • Mandatory Requirements:
  • -High school diploma, G.E.D., or equivalent.
  • -College degree preferred or graduation from an accredited culinary institute.
  • -Must have excellent communication skills.
  • -Must have 5 years previous experience in restaurant operations in a Chef’s position.
  • -Must have thorough knowledge of all aspects of food preparation.
  • -Must have a basic knowledge of spirits/wine.
  • -Must possess a team first attitude.
  • -Must possess a valid food handler’s card.
  • -Must have and maintain a valid driver’s license.
  • -Must provide evidence of employment eligibility in the U.S.
  • -Ability to obtain a valid gaming license and pass a mandatory drug test.
  • -Must be able to communicate in English.
