Manager, Culinary Operations

Job description We are now recruiting a Manager, Culinary Operations to join the Food and Beverage Services team at our corporate offices in Santa Clarita, CA (just north of Los Angeles).

Responsibilities:
• Development and management of all menu plans, recipe structures, employee training, rotation and advancement programs.
• Cost effective operations of food handling, inventory, production and preparation.
• Management of the ships’ menu systems.
• Writes menus and recipes as directed by the Corporate Director of Culinary Operations and liaises with Purchasing regarding availability, specifications, standard item lists and delivery logistics.
• Maintains constant communication with the ships. Conducts sampling and testing of currently used and new products with Food & Beverage and Purchasing management.
• Liaise with the F&B/Hotel Audit Manager in regards to shipboard inventory levels, stock rotation and inter-ship transfers of stock overages when required.
• Monitors food trends and new products towards standards maintenance and improvement.
• Develops, implements and manages effective training programs, manuals and procedures.
• Liaises with Corporate Director of Culinary Operations in the development of departmental budgets.
• Management of food costs, consumptions and passenger satisfaction ratings.
• Creates and updates rotation plans of onboard food department crew, including Provision Masters.
• Maintains, updates and follows up on galley equipment inventory list, including five-year capital expenditure planning, galley remodeling, refits and dry docks.
• Drafts and reviews galley plans and maintains and updates all new build and existing Food Operation plans.
• Liaises with and assists the Environmental and Health Department in developing and implementing effective USPH training programs, manuals and procedures for all food production related personnel and areas.

Required education and work experience
  • Professional Chef’s diploma from a recognized culinary establishment.
  • Minimum of 10 years experience in the hospitality and/or cruise ship industry and extensive international Food and Beverage operations experience. Proficiency in a second language a plus.
  • Knowledgeable in all new food trends, both in the U.S. and worldwide.
  • Knowledgeable in food and beverage products and supplies, their geographic and seasonal availability in the U.S. and key markets worldwide.
  • Knowledgeable in food preparation, presentation and preservation techniques; Galley and Dining Room equipment and service; Yield Management.
  • Possess a thorough understanding of all USPH rules and regulations, USDA and State Agricultural Department grading systems and certifications for USA goods, in addition to grading systems and certifications of key markets worldwide.
  • Strong organizational skills and the ability to meet deadlines in a high pressure environment.
  • Proficiency with computer business applications.
  • Ability to travel frequently both domestically and internationally.
